The Highland cattle is a Scottish bovine breed from the Highland region. It is characterized by a brown-red dress with long hair and by a pair of long horns erected in the air. This hardy breed can graze areas of heath or marsh better than any other breed, and is sometimes used to maintain this type of landscape.
Raised extensively in the Cisse Valley (river) with a very diverse flora, the Highland breed offers marbled meat with low levels of fat and cholesterol.
Moreover, we practice a slow maturation in our cold rooms which allows to reveal all the flavour of this meat with the exceptional taste.
Finally, we cut the meat directly on the farm to constantly ensure the quality of our products.
